LEMON MASCARPONE FIG TART

1 package store bought puff pastry
8 oz. mascarpone cheese, room temperature
3 Tbsp. confectioners sugars
zest from 1 lemon
6 figs, sliced

preheat oven to 350 F. degrees

Carefully roll out the puff pastry & place it in a tart pan. The shape is your choice. Cut off excess, prick the bottom with the tines of a fork & bake for about 15-20 minutes or until golden. Remove from the oven & cool completely.

Put the mascarpone in a small bowl, along with the zest & sugar. Mix until the cheese is smooth & the ingredients are incorporated. Taste for sweetness. Put the cream in the pastry shell & smooth the top evenly.

Place the fig slices on top of the cream. Optional; Drizzle the figs with honey, if the fig aren’t sweet enough. I love CHESTNUT HONEY. If you haven’t tried it, you must!! It’s heavenly!

Once the figs are places, cut & serve.
