Preheat oven to 350f
Butter a 12 cup muffin tin
prepare pancake batter according to box or make your favorite homemade recipe.
1 1/4 c. batter pinch of nutmeg
1/2 c.diced peaches
1/8 tsp. vanilla
1 cup all-purpose flour
1/4 cup packed light-brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
6 tablespoons unsalted butter, room temperature
In a medium bowl, combine flour, sugar, cinnamon, and salt. Using a pastry blender or fork, cut in the butter until fine crumbs form.
Using hands, squeeze together most of the mixture to form large clumps.
Once the batter is divided evenly in the prepared muffin tin, top each muffin with the streusel. Bake for 20 minutes or until a cake tester comes out clean. Serve with maple syrup.
