SPAGHETTI WITH A NO-COOK TOMATO SAUCE

serves 4
2 lbs ripe tomatoes
1/2 c. extra virgin olive oil
6 cloves of garlic
1/4 c. basil leaves
1 1/2 tsp. salt
1lb. spaghetti

Chop the tomatoes into small pieces & put in a large bowl along with the oil, garlic, salt & basil. Let sit at room temperature for at least 3 hours or longer (the longer the better).

When ready to eat, cook spaghetti according to the package. Drain pasta & mix with the tomato sauce.

DIVA NOTEā€¦The tomatoes may make the pasta too cold, so after you drain the pasta, put it back into the pot. Put the heat on medium high and add the sauce. Give it a toss just until it removes the chill from the sauce.
