serves 4

1 lb. spaghetti
1 lb. zucchini, grated on large holes of box grater
4 oz. n’duja salami, out of the casing
1/4 cup olive oil
chop a few basil leaves
salt to taste

Put the oil in a large hot skillet set to medium high. Put the salami into the hot oil & break it up with a wooden spoon. Do this until it starts to break sown 7 turn the oil red.

Add the grated zucchini to the skillet with the salami. Cook until the zucchini soften.

In the meantime, bring a large pot of water to a boil. Add salt & spaghetti. Cook according to package. Drain. Add basil to the sauce then toss the pasta & sauce together. Check for salt.

DIVA NOTE: N’duja is a spicy spreadable salami that’s a specialty of Calabria, Italy. It’s made with loads of red chili peppers that are also a Calabrian specialty. The chilis grown there are some of hottest peppers you can find.
If n’duja is heard to find, use what ever hot Italian salami that available to you.
