FOR THE SALAD
There is no real recipe for this salad. It’s basically anything you want to put into it. This is what I used, but feel free to use you’re favorite fruits & veggies.
6 ripe peaches, cut into large chunks (I used 3 white, 3 yellow)
1/2 cup blueberries
12 cherry or grape tomatoes, cut in half
handful of baby arugula, washed
1/4 of an onion, I kept them in rounds
a few basil leaves, chopped or if small, leave whole.
Either toss it all together or place it on a large plate like I did in the photo.
GINGER DRESSING
1/4 cup rice vinegar
1 1/2 tablespoon honey
1 tablespoon finely grated fresh ginger
1/4 cup olive oil
sea salt & fresh pepper to taste
Put it all together & whisk till incorporates. Dress the salad.
